How to cook it

Low and slow at 135 °C in the oven or on a covered charcoal grill (indirect heat), wrapped halfway, until probe-tender.

Steak doneness is a preference. USDA: whole beef/lamb 63 °C before removal + 3 min rest. For children, pregnant people, older adults or weakened immunity: choose medium-well or above and check with a thermometer. Mince, burgers, kafta and meat sausages: 71 °C. Poultry: 74 °C.

Method Oven or covered grill · 135 °C
Time 3–5 hr
Cook to 93–95 °C
Rest 30–60 min

Directions

  1. Rub with equal parts coarse salt and coarse black pepper. Overnight in the fridge.
  2. Cook at 135 °C, fat side up, in the oven or on a covered charcoal grill with the coals to one side.
  3. When the crust is dark and doesn't smudge, after about 2 hours, wrap tightly in butcher paper (foil works, but softens the bark).
  4. Carry on to 93–95 °C inside, when a probe slides in like butter: 3–4 hours in all for 500 g, 4–5 for 1 kg.
  5. Rest wrapped for 30–60 minutes, then slice pencil-thick against the grain.
🔥 Butcher’s tip Low and slow means leave it alone. Every time the oven door or the grill lid opens, you add time.
